Our Southern Odyssey’s Nightshade-Free Dried Taco Seasoning Mix is really simple to make so much so it is considered a DIY recipe.  So, if you have ever wanted to make a homemade taco seasoning mix here is the recipe.  Our Nightshade-Free Dried Taco Seasoning Mix is lightly spicy and warm.  We make our blend without the use of nightshade peppers.  We chose our spices, that we use, in the recipe with care to create the perfect blend.  This recipe is for a mild taco seasoning mix.  It will not leave your tongue on fire or your lips numb.

Only three kitchen tools are needed when making this recipe.  Measuring spoons will be needed as well as a small glass bowl and a mixing spoon.  A small glass jar with lid is an option if this recipe is to be made in advance.

The taco seasoning mix takes a total of thirteen dry ingredients.  We chose these ingredients for their amazing flavor.  All the ingredients go well together to make this a delicious Nightshade-Free Dried Taco Mix.

The dry ingredients needed for this recipe can be found easily.  The garlic powder adds a strong nutty flavor to the mix.  What is interesting about garlic powder is that it actually gets sweeter as it cooks.  That is excellent because it blends really well with the other spices that are more earthy.  Ginger powder has a warm full flavor that is a little spicy but at the same time in its own way a little sweet.  The turmeric powder on the other hand is a bit bitter.  But don’t let the flavor be a deterrent from using this spice.  It is essential to complete the desired flavor in this mix.  The garlic, ginger and turmeric powders are made by the dehydration of the bulb and root and then pounding them until they become a powder.  The garlic, ginger and turmeric add amazing flavor to our Nightshade-Free Dried Taco Seasoning Mix.

We also add dried parsley, oregano, thyme and basil to the mix.  The dried parsley is a little bitter.  However, it adds a touch of bright color to the mix.  Oregano is a complicated herb because it is both sweet and peppery in flavor.  Because oregano has an unique flavor, it is perfect for Mexican dishes such as our Dried Taco Seasoning Mix.  Dried thyme has a mint flavor.  The thyme is what brings out the flavor of the beet juice we use when making the taco meat.  And finally dried basil has a strong savory taste with a hint of peppery flavor that the sweet basil is known for.  We really like using these herbs in a lot of our recipes.  They are really just an all purpose seasoning that goes well in so many dishes.

The spice that we use the most in this recipe is ground cumin.  Ground cumin is made from seeds that are ground into a powder.  Ground cumin is a beautiful dark brown color, and it smells amazing.  Cumin’s flavor is earthy, nutty and spicy.  However it is not spicy, as in hot.  It is more or less spicy like full body.   We use ground cumin as a focal point in this recipe for its amazing flavor.

Curry powder is a mixture of different spices both sweet and savory in taste.  Overall the curry powder has a slight earthy flavor.  We use curry powder that is void of nightshade peppers.  For example, look for one that does not include paprika.  The spices that are in curry powder are: turmeric, coriander, cinnamon, cumin, garlic, ginger, black pepper and cloves.

Black pepper is the king of spices as well as one of the most used spices.  Black peppercorns come from the flowering vine Piper nigrum which is from the Piperaceae family.  Black peppercorns are from the berries of the vine that grows in tropical climates.  The berries are dried and we get peppercorns.  Black pepper is not a member of the nightshade family.  Black pepper when freshly ground has a strong flavor.  The fresher the peppercorns the stronger the overall flavor and smell.  Freshly ground peppercorns can play havoc on the nose.

We do add pink Himalayan salt to the seasoning mix.  Salt is widely used and using the correct salt for the correct dish is very important.  Pink Himalayan salt is an all purpose salt.  It is great to use when cooking, pink salt also has a beautiful color.  The pink Himalayan salt gets its color from the minerals that make up the salt.

The last two ingredients that we use are sage and ground mustard.  The sage is a light gray color.  Sage goes really well with fatty foods or foods that contains fats.  Sage has a unique flavor that is rich and peppery.  Ground mustard on the other hand is a beautiful yellow color and its flavor is strong and spicy.  One might think that mustard is not spicy but when it is fresh enough it has a little kick.
