Dairy-Free Coconut Milk Ranch Dressing

Our Southern Odyssey

Ranch dressing is a staple down here in the South.  We coat our iceberg lettuce and we don’t stop until our lettuce is floating in it.  It’s quite common in the deep South to ask for extra ranch dressing when we order our small side salad at the beginning of our meal.  Basically, what you are looking at is a bowl of ranch dressing with a little green lettuce floating around.  We put ranch on anything, not just lettuce.  We put it on crackers, broccoli, carrots, pizza and even baked potatoes.  We sure love our ranch dressing.

Because I am from the South, lived here all my life, when I first started this diet I just could not give up my ranch dressing.  We would look in the grocery store trying to find a ranch dressing that would fit into our new diet.  We were left sad and depressed as we left the dressing aisle at the grocery store empty handed with all that lettuce, carrots, broccoli, brussels sprouts, avocado and beets in our buggy (shopping cart) and no ranch dressing.  That is why our ranch dressing recipe was one of the first recipes we created.  Don’t come between a Southerner and their ranch dressing, I’ll tell you that.

 

So now I will guide you to make the perfect Coconut Milk Ranch Dressing that any Southerner would be proud of.

Start with a medium size mixing bowl.  Then add all your wet ingredients.  Next add one cup mayo.  A note about the mayo, you have got to read the labels.  So many of the mayonnaises have added sugar and that is one thing we are trying to avoid.  Look for mayos that are limited in their ingredient list.  We recommend Primal Kitchen with Avocado Oil.  Now add your two cups of coconut milk to the bowl.  A word about coconut milk.  Look for pure coconut milk without additives and if it is in a can make sure that the can is BPA free.  We recommend Aroy-D Coconut Milk 100% Original that comes in a box and is free of additives.  You can find it at Amazon.  Next you will need to add one tablespoon unfiltered apple cider vinegar and extra virgin olive oil.  You will now whisk all your wet ingredients together until it is free of lumps and everything has been blended together.  Time for the dry ingredients, add all your spices to the bowl.  Don’t worry about mixing each one in separately.  Once you have all your dry ingredients in the bowl whisk again.  Use your personal judgement here, when you feel as if all the dry ingredients are incorporated pour the dressing into a quart canning jar and place a lid and ring (band) on the jar and refrigerate for at least 30 minutes before serving.  The newly prepared dressing needs time for all the seasonings to blend together.  You now have a Southern worthy Ranch Dressing.

Don’t forget to label and date your jar of Ranch Dressing.
