Boiled White Sweet Potatoes can be used in any recipe that you would normally use boiled russet potatoes in. I am so glad that we have the option of sweet potatoes that we can use instead of russet potatoes. With so many recipes calling for potatoes, it is great that there is another option. However, do not just think about white sweet potatoes as being an alternative. There flavor and texture can stand on their own. All of our recipes that call for white sweet potatoes are actually really delicious. I cannot believe that we had never ate them before we started on our health journey. Now I cannot imagine not eating or including the white sweet potato in a recipe.
Oh my goodness, here at Our Southern Odyssey, we use boiled white sweet potatoes in so many different recipes. This recipe in particular shows how we boil our potatoes for our White Sweet Potato Salad Recipe, for our Mashed White Sweet Potatoes and of course we sometimes just served the Boiled White Sweet Potatoes as a side without doing anything to them.
Boiled White Sweet Potatoes are delicious with fried okra, peas, and coleslaw. Which is a traditional meal my family eats here in the South. We, also, serve them with baked salmon and a side salad. They are really good with collard greens and our Grain-Free Cornbread. These boiled white sweet potatoes can be served just like you would serve regular russet potatoes. The only difference is that they will have a slight sweet taste. But do not let the sweetness deter you from trying them. They still have the earthy taste like the russet potatoes we are accustom to. So go ahead and try them today.

It was not until recently that we began to see white sweet potatoes in the grocery store and at the farmers market. Here in the United States there are two common types of organic sweet potatoes with a white flesh. When we talk about white sweet potatoes we mean a sweet potato that has a tan outer skin with a white flesh. There is an Oriental sweet potato that has a pink to purplish outer skin and a white flesh. We do not use the Oriental sweet potatoes; because, they are prone to dark spots after they are peeled. Even after putting them in water.
The grocery store does a good job keeping the white sweet potatoes in stock. So make sure that you check out the grocery store and ask for white sweet potatoes, with a tan outer skin and a white flesh, if they do not have them in stock. Also, don’t be afraid to ask farmers in your area if they will growing white sweet potatoes. Most of the time if enough people want and ask for an item, the farmer may consider growing that vegetable for his customers.
Instructions:
This is a very simple recipe that only requires five ingredients. All you really need is three large white sweet potatoes, filtered water, and seasoning for the water that includes olive oil, pink salt and pepper with the option of parsley. This is one of those recipes that proves that it really does not take that many ingredients to make a delicious side dish.
Start by selecting three large white sweet potatoes. Wash the white sweet potatoes under fresh filtered water, and place them on a dish towel to dry. After the potatoes have dried a little, take the vegetable peeler and start peeling the white sweet potatoes. Since the white sweet potatoes have a very soft smooth outer skin peeling them is really easy. After the white sweet potatoes are peeled take and place them on the cutting board. Cut the ends off the white sweet potatoes and discard the ends. Now take and starting at the end, slice the white sweet potatoes into circles about a half inch wide. When you are done you should have half inch round white sweet potatoes slices. Now take the slices and slice them again into cubes. Cut the white sweet potato rounds in half and then cut them the other way. Use the step-by-step guide as a reference, if you need a visual. Place the cubes in the pot with enough water to cover the sweet potatoes. White sweet potatoes have a tendency to get dark spots on them if they are not submerged in water. Continue following these steps until all three white sweet potatoes are cubed. Add water to the pot every time you add more white sweet potato cubes.
Make sure that the water does not come to the very top of the pot. Because if it does the water will boil over. If you feel that it might boil over take and get a larger pot. Add pink salt, pepper, olive oil and parsley to the water. Place the pot on the eye (burner). Turn the eye (burner) on high and wait until it comes to a boil. After the potatoes come to a boil turn the heat down to medium and allow the white sweet potato cubes to cook for 25 minutes or until soft.
When the white sweet potatoes have finished cooking drain off the water. The water can be poured off using a lid that has holes located in the rim or the potatoes can be poured into a colander to drain all the water off. Pour the white sweet potatoes into a bowl and serve hot. If using boiled white sweet potatoes in another recipe follow the instructions for that recipe at this time.

What you will need:
Pot with lid that has side holes,
Dish towel,
Cutting Board,
Chef Knife,
Vegetable Peeler,

Ingredients
- 3 large white sweet potatoes - washed, peeled and chopped
- Filtered or Spring Water - enough to cover potatoes in pot
- 1 Tablespoon Organic Olive Oil
- 1 Tablespoon Himalayan Pink Salt
- 1/2 teaspoon Tellicherry Black Pepper
- Optional: Fresh parsley
Instructions
- Wash the white sweet potatoes and lay on a dish towel to dry
- Using the vegetable peeler, peel the potatoes
- Place peeled potato on a cutting board, starting at the end make slices about 1/2 inch wide until entire potato is sliced. Discard the end pieces.
- Now take those slices, about 3 at a time and cut them in half one way then in half the other way. They should look like cubes now.
- Place them in the pot and cover with water
- Repeat steps 3-5 for the two additional potatoes.
- Keep the potatoes covered with water in the pot so they do not turn dark
- Add the olive oil, salt and pepper to the pot
- Place the pot with sweet potatoes cubes on eye (burner) - turn on high
- Bring to a boil. You need to keep an eye on the potatoes to keep them from boiling over.
- Reduce the heat to medium and cover the pot with a lid
- Let the potatoes boil for 25 minutes or until soft.
- Using a lid with holes - pour the water off the potatoes making sure to hold the lid in place tight (If using these potatoes in another recipe stop here)
- Pour the potatoes into a serving bowl
- OPTIONAL: Sprinkle the top of the potatoes with black pepper and fresh parsley
