Baked Chicken Tenders

We here at Our Southern Odyssey have created a very simple recipe that can be made when one is in a hurry.  Our Baked Chicken Tenders can be made as a snack or as an appetizer for a party.  I love recipes that are simple yet are so versatile in the way they can be served.

I don’t know about you but we love chicken no matter how it is cooked.  These baked chicken tenders are easy, tasty and just down right delicious.  Need a quick lunch or dinner?  Then this recipe is just what you need.  This is our go to recipe when we are limited on time but need FOOD!  Since we prepare all our meals at home it is a very good idea to have some quick and easy recipes to fix when there are a thousand other things that needs to get done; but, you still have to eat.  Like we said, this is our go to recipe when we need food on the table but really do not have time to make anything.  Somedays we do not even have time to sit down at the table, so grabbing a Baked Chicken Tender and eating it as we are walking around the house trying to get our things together, is convenient.  Did I mention that they make great finger foods?  

All this particular recipe calls for is olive oil, pink salt, pepper and two chicken breast that are skinless.  They take thirty minutes to cook and then you will have a healthy delicious protein that can be taken on the go or eaten at home.  According to the American Heart Association Chicken has less saturated fat than other meats.  This  makes chicken a great complete protein source.  And protein is essential for providing the body with energy.  Chicken also contains essential nutrients such as amino acids, selenium, iron and B vitamins.  When buying the skinless chicken breast we always choose organic.  Again the better quality the meat the better the flavor.  And flavor is extremely important when creating a recipe.

Some basic meat precautions we should take in the kitchen.  Remember to keep raw chicken away from vegetables especially vegetables that will not be cooked.  Also, keep cutting boards and knives used to prepare chicken, or any other meat, away from other foods until they are properly and thoroughly cleaned.  Make sure the work station is cleaned before starting to prepare the chicken as well as afterwards.  Always make sure to wash your hands before and after handling raw chicken.  And never use a knife that was used to prepare the raw chicken, to cut the cooked chicken.  Unless the knife has been thoroughly washed after preparing the raw chicken.  Having excellent kitchen hygiene is key to a healthy meal.  

When choosing the perfect chicken breast to make this recipe we recommend 100% Air Chilled Organic Chicken.  We choose 100% Air Chilled Chicken because the chicken has not been left to soak in chlorinated water.  We, also, choose organic chicken because we want the chicken as pure as possible.  The better the chicken is treated and fed the better the meat.  

These Baked Chicken Tenders can be served as the main protein of a meal.  Serving them with mashed white sweet potatoes and some green beans, sounds delicious.  They can also be served on a salad or with mixed raw vegetables and a dip.  The options are really limitless when it comes to serving this simple recipe.

Instructions:

Because we are dealing with raw meat I find it useful to go ahead and get all of my kitchen tools that I need out on the counter.  Saying that go ahead and get out the cutting board, knife, roasting pan, unbleached parchment paper, fork and potholders.

Start by preheating the oven to 400 degrees Fahrenheit.  While the oven is preheating, go ahead and get the two raw skinless chicken breast out of the refrigerator and take and slice the chicken breast into strips.  Each chicken breast should make about four strips.  As you finish cutting up the chicken breast place the strips, on the unbleached parchment paper, on the baking pan.  Coat each chicken strip with olive oil.  Because the chicken is skinless it does not have a protective layer that will help hold in the juices of the chicken.  This is why we put olive oil on the chicken strips to keep the chicken from drying out while it cooks.  Next salt and pepper the chicken strips.  We use pink Himalayan salt for the flavor and the minerals that it has.  Place the chicken strips into the oven and cook for 20 minutes.  At this point you will no longer need the cutting board or knife so they can be cleaned and put back up.

After the 20 minutes are up, using a potholder remove the baking pan with the chicken tenders on it from the oven.  Leave the oven on because we will be placing the chicken strips back into the oven after we turn them over.  With the fork turn the chicken strips over, coat the chicken strips with olive oil and sprinkle with pink salt and pepper.  Place the chicken back into the oven and cook for 10 minutes. 

Note: If you placed the baking pan on a potholder when you removed the baking pan from the oven make sure that the potholder is still on the table or counter and not in the oven.  Sometimes potholders like to stick to the bottom of hot pans and that is problematic. 

After the 10 minutes are up turn the oven off and remove the chicken tenders from the oven.  The chicken tenders will be extremely hot so it is a good idea to allow them to cool for just a little bit.  The chicken tenders can be served whole or they can be cut up into small cubes.  We hope you enjoy this simple Baked Chicken Tender Recipe.  We sure do, especially when we are short on time.
